I'm running a contest right now on my Wii forums. People can guess the launch date & price of the Wii, and win gift certificates for free video games. But to be honest, it's not working very well at all. I think I have 4 members (aside from myself) who have bothered to guess, and I do not think any of them signed up because of the contest. Dozens of people have come to the site, and could see that there were contests, but they didn't sign up.
However, I did run a contest a while back, on another forum. It was a logo contest. It brought in tons of new members, and got about 30 entries.
So I guess it depends.

For content building the new RC of vBulletin has a great auto RSS poster, filling my forums up for me quite nicely.
